Depanneur x Kala’s Kimchi

On October 9th we are celebrating kimchi at the Dep with U.S-Korean chef Kala Sung and Depanneur’s own head chef & baker Matthias Fusi. Based on the Depanneur menu the two will incorporate the spicy Korean condiment into both food and drinks to manifest its diverse use in any kitchen.

As borders have gotten smaller, cultures have become closely knit over interests, similarities and differences with cuisines as frontrunners. Kala Sung is a great example of that: the New Yorker now residing in Copenhagen has made kimchi, a unifying element of Korean culture and tradition, her signature. With her business Kala’s Kimchi she makes food tours across the country to showcase the versatility of both making and using kimchi.

Kala herself will be at Depanneur all day sharing both secrets and recipes, while serving bagels with her signature kimchi. She is looking forward to sharing something that reminds her of home more than ever:

“When living in New York I would pick up bagels every morning on the Lower East Side.
It was a perfect way to start the day. It’s been a while since I have been back, but the bagels and the buzz at Depanneur makes me miss New York much less, that is why I just had to ask if Matthias would be up for a kimchi twist”. For Matthias, our Argentinian-born chef de cuisine, Kala’s suggestion was a no-brainer: “Kimchi works with everything. It’s a powerful add-on to any meal, and if we can be part of opening up our guests palette even more, we have to!”.

In the past year signature dishes from Gasoline Grill to Meyer’s and Hart Bageri have all received a kimchi-treat from Kala, and on Friday October 9th your bagels at Depanneur will be more spicy than the usual, if you want them to be. As a full day treat, all bagels will be smeared with kimchi cream cheese, while Matthias’ signature potato omelet will be served all day with kimchi topping, and from the afternoon the drinks card will be upgraded with a Kimchi Moscow Mule (surprisingly great!).
